SMOTHERED BIRDS
• 6 quail, split into halves
• 1/2 cup all-purpose flour
• 1/2 teaspoon salt
• 1/8 teaspoon pepper
• 1/4 cup butter or margarine
• 1 1/4 cups chicken broth
Combine flour, salt and pepper and coat quail halves. Reserve two tablespoons
of flour mixture and discard remainder.
In medium skillet, melt butter and brown quail over medium heat. Add 3/4 cup
broth to skillet, reduce
